I have been traveling to see my mom for her birthday so today was not a big cooking day but I got to make soft shell craps and made a big salad. Soft shell carbs only come around once a year always around the middle of May. They are delicate and rich in flavor. My mom cooks them in lemon and butter topped with cappers. I plated them in a bed of smashed potato's coated in olive oil and salt. My family loves to make a simple salad With not many ingredients.
