Weekly Refection #2

Sunday  May 21, 2023 Total Hours 80 hours  I am finally done, I took a few days off this week to relax because last week I worked strait for the whole week. I was very happy to be able to take a short break before picking back up on the cooking. I did not think I was going to finish my whole project but I did. And it was so worth all the long hours and burns on my hands. I got many battle scares. I have really loved being on senior project.  I did not have much going this week because last week I got almost all my hours in the first week. So I was able to take a little break and relax which was very needed because of last week. I had a hard time following along with my set plan. But I was able to cook food that I have always wanted to make.  I really worked on my goals of getting better at knife skills, chopping fruit, vegetables small, and even. I even worked on plating food and just being able to get creative with snacks and lunches I ate. For lunch one day, I made a tuna avocado pan

DAY 10  Monday  I made another pavlova for my families dinner the night before I left to go back to school. This was the second one I made and to be honest this was even better then the first one. I really like making this dessert because it is tasty and it uses egg whites if you have them around it is a good way to get rid of them. By adding whipped cream to the top just makes it even lighter if a dessert. It is a simple but so delicious dessert.  Total hours 3:00-5:00 2hours

 Friday  Day 8 May 19th, 2023  Today is my moms birthday! And I'm cooking the whole day. I started the day cooking and collecting the rhubarb for her birthday dessert. I had made a rhubarb crisp for her. For dinner, I made six racks of ribs three were my aunts ferocious barbecue sauce. For the other three I made an asian sticky sauce. Which actually was the hit of the whole dinner.  We also made another simple salad with a shallots dressing. I was so tried after this day because I had to based the ribs every 45 mins.  Total hours  9:30 - 11:00am 3:00- 8:30pm  7  hours

Thursday  Day 8 May 18th, 2023  Before traveling my sister and I went to the Portland fish market to pick up Salmon and Tuna. I wanted to try making sushi for the first time. My aunt lived in Japan as a sushi chef on the front line. I did so much prep for this I had to finally chop carrots, cucumber, avocado, salmon and tuna. I also made, the rice and prepared it for making crispy rice. I made an avocado cucumber role, rainbow role, space tuna, crispy rice with salmon, and avocado tuna role. This was so hard because I had no idea what I was doing. I tried to place the rice on the outside of the seaweed. This did not work for see so i started to leave the rice on the inside. The sushi was so amazing and the fish was still so fresh. I made sushi for lunch that day.  Total hours:  11:00- 2:00 3:15-4:15 4 hours

 Wednesday  Day 7  May 17th, 2023  I have been traveling to see my mom for her birthday so today was not a big cooking day but I got to make soft shell craps and made a big salad. Soft shell carbs only come around once a year always around the middle of May. They are delicate and rich in flavor. My mom cooks them in lemon and butter topped with cappers. I plated them in a bed of smashed potato's coated in olive oil and salt. My family loves to make a simple salad With not many ingredients.  Total hours: 3:00-6:00pm 7:00-8:30pm 4 1/2 hours 

Weekly Refection #1

 End of Week #1  During the week I have realized how much I really do love cooking.  I have been cooking a lot and I have now finally realized how weird I am. But this week has been so amazing. I have gotten to spend time with my father who taught me who to bake and make some of the best desserts ever.  I also have been spending a lot of time with my mentor who is also my grandmother, and the person I look up to when it comes to cooking. They both have taught me things and given me very good tips and tricks.  I have been having a hard time accomplishing the plating of food because of the food I have been cooking has not always been easy to but on a plate. I have been working on the skills I have needed to learn, like knife skills, and sharing to kitchen. I have never washed so many dishes in my life. After my first day my hands were so dry. I have had a hard times posting my blogs on time because my family does not eat dinner till 8 every night or even later some night. I am eating ver

 Greek  Day 7  It is Mother's Day! And Greek food! I started the day early making two Baklava's one with walnuts and the other with almonds. I made lots because my family loves Baklava especial my sister. I have never made it, but I have watched my sister, and her best freind make it so I tried to make it on my own. It was very easy except the phyllo dough dries out so fast. When that was done I headed over the my grandmothers house to help plant the plants we had bought the day before. once that was done I headed inside to start preparing the main dish. Which was Moussaka it is an eggplant based dish that resembles lasagna. The first layer was bread crumbs and parmesan. Then eggplant after that you put the meat mixture which has onions and ground lamb along with lots of spices. After, you finish the meat and eggplants you pour an egg cheese liquid over the top and bake till golden. This meal was very light and delicious.  Hours:  8:30-12:00 1:00-5:00pm  Total hours: 8 1/2  Bak
